Ingredients

2 cans (15 oz each) white beans (cannellini or navy), rinsed and drained

1 cup homemade or store-bought basil pesto

1 cup cherry tomatoes, halved

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/4 cup breadcrumbs (preferably whole wheat)

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Beans: In a large mixing bowl, combine the rinsed and drained white beans with the minced garlic, dried oregano, salt, and pepper. Gently fold to ensure the beans are coated evenly.

Mix in Pesto: Add the basil pesto to the bean mixture and stir well until all the beans are coated in the pesto.

Combine with Tomatoes: Fold in the halved cherry tomatoes, allowing them to distribute throughout the mixture.

Transfer to Baking Dish: Pour the bean and pesto mixture into a greased 9x13-inch baking dish, spreading it evenly across the bottom.

Cheese Topping: Sprinkle the shredded mozzarella and grated Parmesan evenly over the top.

Breadcrumb Crunch: In a small bowl, mix the breadcrumbs with olive oil, and then sprinkle this mixture over the cheese layer for added crunch.

Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.

Serve: Once done, remove from the oven and let it sit for 5 minutes. Garnish with fresh basil leaves before serving.
