Tuscan Chicken Pasta Recipe

2 boneless, skinless chicken breasts

8 ounces of penne pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup spinach, packed

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

Fresh basil leaves, for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

    Sear the Chicken: Season the chicken breasts with salt, pepper, and a sprinkle of Italian herbs. In a large skillet over medium-high heat, heat 2 tablespoons of olive oil. Add the chicken and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet, and let rest before slicing.

      Sauté Vegetables: In the same skillet, add minced garlic and cook for 30 seconds until fragrant. Add the cherry tomatoes and cook for about 3-4 minutes until they begin to soften. Stir in the spinach and let it wilt.

        Make the Sauce: Reduce the heat to low and pour in the heavy cream, mixing well with the vegetables. Add the grated Parmesan cheese and stir continuously until melted and creamy. If the sauce is too thick, add some reserved pasta water until desired consistency is reached.

          Combine Everything: Add the cooked penne pasta and sliced chicken to the skillet, tossing everything together to coat with the sauce. Season with additional salt, pepper, and Italian herbs if needed.
