Traditional Egyptian Koshari

1 cup brown lentils, rinsed

1 cup basmati rice, rinsed

1 cup macaroni (small elbow macaroni or similar)

1 large onion, thinly sliced

4 cloves garlic, minced

1 can (14 oz) crushed tomatoes

1 tablespoon tomato paste

1 teaspoon cumin

1 teaspoon coriander

1 teaspoon paprika

½ teaspoon cayenne pepper (adjust for heat preference)

Salt and pepper to taste

3 tablespoons vegetable oil

1 teaspoon vinegar (white or red wine)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Cook the Lentils: In a medium saucepan, add the brown lentils with 3 cups of water. Bring to a boil, then reduce heat and simmer for about 20-25 minutes or until tender. Drain and set aside.

    Prepare the Rice: In the same pot, add another 1 tablespoon of oil. Add the drained lentils back to the pot, and stir in the rinsed rice with 2 cups of water. Season with salt. Bring to a boil, then cover, reduce heat, and simmer for about 15-20 minutes, until the rice is cooked. Remove from heat and let it sit covered for another 10 minutes.

      Cook the Macaroni: In a separate pot, boil salted water and cook the macaroni until al dente, according to package instructions. Drain and set aside.

        Fry the Onions: In a large frying pan, heat 2 tablespoons of oil over medium heat. Add the sliced onions and sauté until they are deep golden brown and crispy, about 10-15 minutes. Remove and drain on a paper towel.

          Make the Tomato Sauce: In another pan, heat a teaspoon of oil and sauté the minced garlic until fragrant. Add the crushed tomatoes, tomato paste, cumin, coriander, paprika, cayenne pepper, salt, and pepper. Cook for about 10 minutes, stirring occasionally, until slightly thickened. Stir in the vinegar for added tang.

            Assemble the Koshari: In a large serving dish, layer the lentil rice mixture, followed by the macaroni on top. Pour the tomato sauce evenly over the dish. Finish with the crispy fried onions on top.

              Garnish and Serve: Sprinkle with fresh cilantro or parsley if desired. Serve hot with additional tomato sauce on the side for drizzling.
