1 cup all-purpose flour

1/4 cup unsweetened cocoa powder

1/4 cup granulated sugar

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1 cup buttermilk (or milk + 1 tsp vinegar, left to sit for 5 minutes)

1 large egg

2 tbsp melted butter (plus extra for the pan)

1/2 tsp vanilla extract

1/2 cup semi-sweet chocolate chips (plus extra for topping)

Instructions
 

In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt until well combined.

    In a separate bowl, mix the buttermilk, egg, melted butter, and vanilla extract together, stirring until smooth.

      Pour the wet ingredients into the dry ingredients and gently fold together until just combined. Do not overmix; a few lumps are okay. Gently fold in the chocolate chips.

        Heat a non-stick skillet or griddle over medium heat and lightly grease with melted butter.

          Once hot, pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles start to form on the surface, then flip and cook for another 1-2 minutes until golden brown.

            Repeat with the remaining batter, adding more butter to the skillet as needed.
