1 lb (450g) chicken thighs, boneless and skinless, cut into bite-sized pieces

1 cup uncooked jasmine rice

1 cup water or chicken broth (for cooking rice)

1/4 cup soy sauce (preferably low sodium)

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

1-inch piece of ginger, grated

1 tablespoon cornstarch mixed with 2 tablespoons cold water (for thickening)

2 green onions, chopped (for garnish)

1 tablespoon sesame seeds (for garnish)

Steamed broccoli or mixed vegetables (optional)

Marinate the Chicken: In a medium bowl, combine the soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger. Add the chicken pieces and toss until well coated. Let it marinate for at least 30 minutes (or up to overnight in the fridge for deeper flavor).

    Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and water (or chicken broth). Bring to a boil, then reduce the heat to low, cover, and let it simmer for about 15 minutes or until the rice is tender and liquid is absorbed. Fluff with a fork and set aside.
