Ingredients
  

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons vegetable oil

3 cloves garlic, minced

1-inch piece ginger, grated

1 red bell pepper, sliced

1 cup snap peas, trimmed

3 green onions, sliced

1/4 cup soy sauce

2 tablespoons fish sauce

3 tablespoons honey

1 tablespoon sriracha (adjust for spice preference)

Juice of 1 lime

1 tablespoon rice vinegar

1/4 cup fresh basil, chopped (Thai basil if available)

Sesame seeds for garnish

Instructions
 

In a large bowl, combine the chicken pieces with soy sauce, fish sauce, honey, sriracha, lime juice, and rice vinegar. Mix well and let marinate for at least 30 minutes (up to 2 hours for more flavor).

    In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and grated ginger, stirring for about 30 seconds until fragrant.

      Add the marinated chicken to the skillet, cooking for about 5-7 minutes or until browned and cooked through, stirring occasionally.

        Toss in the sliced red bell pepper and snap peas. Stir-fry for an additional 3-4 minutes until the vegetables are tender-crisp.

          Remove from heat and fold in the fresh basil. Taste and adjust seasoning or spice level if needed.

            Serve the Sweet and Spicy Thai Chicken over steamed jasmine rice or rice noodles, and sprinkle with sesame seeds and sliced green onions for garnish.
