2 large red onions, thinly sliced

2 tablespoons sumac

1 teaspoon kosher salt

2 tablespoons olive oil

1 tablespoon red wine vinegar

1 teaspoon honey (or maple syrup for a vegan option)

Fresh parsley, chopped (for garnish)

Freshly cracked black pepper (to taste)

Instructions
 

In a large bowl, combine the thinly sliced red onions with the kosher salt. Toss gently to coat the onions in salt and let them sit for about 10 minutes. This will help draw out some moisture and soften the onions.

    After 10 minutes, rinse the onions under cold water to remove excess salt. Drain well and set aside.

      In a separate small bowl, whisk together the olive oil, red wine vinegar, honey, and sumac until well combined.

        Pour the sumac dressing over the rinsed onions and toss well to ensure all onions are coated evenly with the dressing.

          Taste and adjust seasoning with freshly cracked black pepper if desired.

            Cover the bowl with plastic wrap and let the mixture marinate for at least 30 minutes at room temperature, or refrigerate for up to 2 hours for deeper flavor.

              Before serving, sprinkle fresh chopped parsley over the onions for a burst of color and freshness.
