Ingredients

4 cups fresh strawberries, hulled and sliced

4 cups fresh peaches, pitted and sliced

1/2 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 teaspoon cornstarch

1 cup old-fashioned rolled oats

1 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup unsalted butter, melted

Optional: vanilla ice cream for serving

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Fruit Filling: In a large mixing bowl, combine the sliced strawberries and peaches. Add granulated sugar, lemon juice, vanilla extract, and cornstarch. Gently fold until the fruit is well-coated. Pour the fruit mixture into a greased 9x13 inch baking dish.

Make the Crisp Topping: In another bowl, mix the rolled oats, flour, brown sugar, cinnamon, and salt. Drizzle the melted butter over the dry ingredients and stir until the mixture is crumbly and well combined.

Assemble the Crisp: Evenly spread the oat mixture over the fruit filling in the baking dish.

Bake: Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the topping is golden brown and the fruit is bubbling.

Cool and Serve: Remove from the oven and allow it to cool for about 10 minutes. Serve warm with a scoop of vanilla ice cream if desired.
