2 cups cooked chicken breast, shredded

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 red bell pepper, diced

1 avocado, diced

1/2 cup red onion, finely chopped

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

1 cup romaine lettuce, chopped

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup ranch dressing (or spicy southwestern dressing)

1 tablespoon lime juice

Tortilla strips (for garnishing)

Instructions
 

In a large mixing bowl, combine the shredded chicken, black beans, corn, red bell pepper, avocado, red onion, cherry tomatoes, and cilantro.

    In a small bowl, whisk together the ranch dressing, lime juice, chili powder, cumin, smoked paprika, salt, and pepper until well combined.

      Pour the dressing over the chicken mixture and gently toss to coat all the ingredients evenly.

        Serve each portion on a bed of chopped romaine lettuce and garnish with tortilla strips for added crunch.
