8 oz (225g) fresh or dried noodles (spaghetti or egg noodles work well)

3 tablespoons vegetable oil

8 cloves garlic, minced

1-2 teaspoons red chili flakes (adjust to taste)

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon Szechuan peppercorns (optional)

1 teaspoon sugar

2 green onions, finely chopped

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Cook the Noodles: In a large pot, bring salted water to a boil. Add the noodles and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Oil: In a large skillet or wok, heat the vegetable oil over medium heat.

      Sauté Garlic: Add the minced garlic to the pan and sauté for about 1-2 minutes until fragrant and lightly golden, being careful not to burn it.

        Add Spice: Stir in the red chili flakes and Szechuan peppercorns (if using) and cook for another 30 seconds to release their flavors.

          Combine Sauces: Add the soy sauce, oyster sauce, and sugar to the skillet, stirring to combine. Let it simmer for a minute to thicken slightly.

            Toss Noodles: Add the cooked noodles to the skillet and toss to coat them evenly in the spicy garlic sauce.

              Add Green Onions: Stir in the chopped green onions and sauté everything together for 1-2 minutes to heat through.

                Serve: Plate the noodles and garnish with fresh cilantro. Serve with lime wedges on the side for an extra zing.
