2 ripe bananas, mashed

1 cup all-purpose flour

1/4 cup sugar

1/2 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup milk (or non-dairy milk)

1 large egg

1 teaspoon vanilla extract

1/4 cup chopped walnuts (optional)

Oil for frying

Powdered sugar for dusting (optional)

Instructions
 

In a large mixing bowl, combine the mashed bananas, flour, sugar, baking powder, cinnamon, and salt. Mix well until combined.

    In a separate bowl, whisk together the milk, egg, and vanilla extract.

      Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; some lumps are okay. If using, fold in the chopped walnuts.

        Heat about 1/4 inch of oil in a skillet over medium heat until it shimmers (around 350°F or 175°C).

          Drop spoonfuls of batter into the hot oil, frying in batches to avoid overcrowding the skillet. Cook for about 2-3 minutes per side or until golden brown.

            Once cooked, transfer the fritters to a paper towel-lined plate to drain excess oil.

              Dust with powdered sugar before serving if desired. Enjoy warm!
