1 lb (450g) flank steak, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil, divided

1 red bell pepper, thinly sliced

1 green bell pepper, thinly sliced

1 large onion, thinly sliced

3 cloves garlic, minced

1 tablespoon ginger, minced

2 tablespoons oyster sauce

1 tablespoon honey or brown sugar

1 teaspoon black pepper

2 green onions, chopped for garnish

Cooked rice or noodles, for serving

Marinate the Steak: In a bowl, combine the sliced flank steak, soy sauce, and cornstarch. Toss to coat thoroughly and let it marinate for at least 15 minutes or up to 1 hour for more flavor.

    Prepare the Vegetables: While the steak is marinating, prepare the bell peppers, onion, garlic, and ginger. Set aside.

      Heat the Pan: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated steak in a single layer. Sear for about 2-3 minutes until browned. Avoid overcrowding the pan; you may need to do this in batches. Once done, remove the steak and set aside.

        Cook the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the onions, and stir-fry for about 2 minutes until they start to become translucent.
