Shrimp and Avocado Bowls with Mango Salsa & Lime-Chili Sauce

For the Shrimp:

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon chili powder

Salt and pepper to taste

For the Mango Salsa:

1 ripe mango, diced

1 small red onion, finely chopped

1 red bell pepper, diced

1 jalapeño, minced (optional for spice)

Juice of 1 lime

¼ cup fresh cilantro, chopped

Salt to taste

For the Lime-Chili Sauce:

1/4 cup sour cream or Greek yogurt

2 tablespoons mayonnaise

Zest of 1 lime

Juice of 1 lime

1 teaspoon chili powder

Salt to taste

For Assembling:

2 cups cooked quinoa or rice

2 ripe avocados, sliced

Fresh cilantro leaves for garnish

Lime wedges for serving

Instructions
 

Prepare the Shrimp:

    - In a large bowl, combine olive oil, smoked paprika, garlic powder, chili powder, salt, and pepper. Add the shrimp and toss until evenly coated.

      - Heat a large skillet over medium-high heat. Cook the shrimp for about 2-3 minutes per side, or until they are pink and opaque. Remove from heat and set aside.

        Make the Mango Salsa:

          - In a separate bowl, combine the diced mango, red onion, red bell pepper, jalapeño (if using), lime juice, cilantro, and salt. Mix well and set aside to allow the flavors to meld.

            Prepare the Lime-Chili Sauce:

              - In a small bowl, whisk together the sour cream (or yogurt), mayonnaise, lime zest, lime juice, chili powder, and salt. Adjust to taste and set aside.

                Assemble the Bowls:

                  - Start with a base of cooked quinoa or rice in each bowl.

                    - Arrange the cooked shrimp and sliced avocado on top.

                      - Spoon the mango salsa generously over the shrimp and avocado.

                        - Drizzle the lime-chili sauce over everything and garnish with fresh cilantro leaves.
