Sheet Pan Sausage and Veggies

Ingredients
  

1 pound Italian sausage (preferably a mix of sweet and spicy)

2 cups broccoli florets

2 cups bell peppers (any color), sliced

1 cup red onion, sliced

1 cup cherry tomatoes, halved

4 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large bowl, combine the Italian sausage, broccoli, bell peppers, red onion, and cherry tomatoes.

      Drizzle olive oil over the mixture and add minced garlic, oregano, smoked paprika, salt, and pepper. Toss everything together until the veggies and sausage are evenly coated.

        Line a large baking sheet with parchment paper for easy cleanup. Spread the sausage and veggie mixture evenly on the sheet.

          Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the sausage is cooked through and the vegetables are tender and slightly crispy.

            Once done, remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
