2 cups cooked jasmine rice (preferably day-old)

1 lb chicken thighs, boneless and skinless, diced

3 tablespoons soy sauce

2 tablespoons teriyaki sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

4 green onions, chopped (white and green parts separated)

1 cup frozen mixed vegetables (peas, carrots, corn)

3 cloves garlic, minced

1 tablespoon ginger, minced

2 large eggs, beaten

1 teaspoon salt (to taste)

1/2 teaspoon black pepper (to taste)

1 tablespoon toasted sesame seeds (for garnish)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Marinate the Chicken: In a medium bowl, combine diced chicken with soy sauce, teriyaki sauce, and a pinch of salt and pepper. Let it marinate for at least 15 minutes to soak in the flavors.

    Prepare the Rice: If you're using freshly cooked rice, spread it out on a baking sheet and let it cool for about 30 minutes to prevent clumping.

      Cook the Chicken: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated chicken and cook for 6-8 minutes or until fully cooked and browned. Remove the chicken from the skillet and set it aside.

        Sauté Aromatics: In the same skillet, add sesame oil and the chopped white parts of the green onions. Sauté for 1-2 minutes until fragrant. Then, add the minced garlic and ginger, cooking for another minute.

          Add Vegetables: Stir in the frozen mixed vegetables and cook until they're heated through, about 3-4 minutes.

            Scramble the Eggs: Push the veggie mixture to one side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until fully cooked, then mix them back into the vegetable mixture.

              Combine Everything: Add the cooked rice and then the chicken back into the skillet. Stir everything to combine and allow the rice to fry slightly, letting it get slightly crispy, about 5-7 minutes. Adjust seasoning with salt and pepper to taste.

                Finish and Serve: Remove from heat, and sprinkle with toasted sesame seeds and the green parts of the chopped green onions. Garnish with fresh cilantro or parsley if desired.
