Ingredients

3 medium ripe bananas, mashed

2 large eggs

1/4 cup unsweetened applesauce

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

1 cup whole wheat flour

1/2 cup protein powder (vanilla or unflavored)

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon (optional)

1/2 cup chopped walnuts or chocolate chips (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with cooking spray or line it with parchment paper for easy removal.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, eggs, applesauce, honey (or maple syrup), and vanilla extract. Mix until smooth and well combined.

Combine Dry Ingredients: In a separate bowl, whisk together the whole wheat flour, protein powder, baking soda, salt, and ground cinnamon (if using). Ensure there are no lumps.

Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Avoid over-mixing; it's okay if there are a few lumps.

Add Mix-ins: If you’re using walnuts or chocolate chips, fold them into the batter now.

Pour into Prepared Pan: Pour the batter into the prepared loaf pan and spread it evenly.

Bake: Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center comes out clean. If the top is browning too quickly, you can cover it loosely with aluminum foil.

Cool: Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Slice and Serve: Once cooled, slice the banana bread and enjoy! Each slice contains approximately 10 grams of protein.
