Ingredients

4 slices of bread (your choice: sourdough, white, or whole wheat)

2 cups shredded mozzarella cheese

1 cup marinara sauce (plus extra for dipping)

1/2 cup pepperoni slices (or any toppings of your choice: mushrooms, bell peppers, etc.)

2 tablespoons olive oil or butter

1 teaspoon dried oregano

1 teaspoon garlic powder

A pinch of red pepper flakes (optional)

Fresh basil leaves for garnish (optional)

Instructions

Prepare the Bread: Heat a skillet over medium-low heat. Brush one side of each slice of bread with olive oil or butter.

Build the Sandwich: On the unbuttered side of two slices, layer 1 cup of mozzarella cheese evenly. Top with 1/2 cup pepperoni (or your choice of toppings), and sprinkle 1/2 teaspoon of dried oregano and garlic powder. Add another slice of bread, buttered side up, to create a sandwich.

Grill the Sandwich: Carefully place the sandwich in the heated skillet. Cook for about 3-4 minutes or until the bottom is golden brown and crispy.

Flip & Cheese It Up: Carefully flip the sandwich, and cook the other side for another 3-4 minutes. Before it finishes, sprinkle the remaining mozzarella cheese on top and cover the skillet with a lid for the last minute (this helps melt the cheese evenly).

Serve: Once both sides are crispy and the cheese is melty, remove the sandwich from the skillet. Slice in half and serve hot alongside warmed marinara sauce for dipping. Optionally, garnish with fresh basil leaves and a sprinkle of red pepper flakes for added flavor.
