Pesto Pasta with Grilled Chicken

12 oz spaghetti or your favorite pasta

2 cups fresh basil leaves

1/2 cup grated Parmesan cheese

1/3 cup pine nuts (toasted)

3 cloves garlic, minced

1/2 cup extra virgin olive oil

Salt and pepper to taste

2 boneless, skinless chicken breasts

1 tablespoon Italian seasoning

1 tablespoon olive oil for chicken

Cherry tomatoes, halved (for garnish)

Additional basil leaves (for garnish)

Cook the Pasta: In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Drain and set aside.

    Make the Pesto: In a food processor, combine the basil leaves, Parmesan cheese, pine nuts, minced garlic, and a pinch of salt and pepper. Pulse until the mixture is finely chopped. With the food processor running, slowly drizzle in the olive oil until the pesto is smooth and creamy. Adjust seasoning as needed.
