Ingredients

For the Chicken:

4 boneless, skinless chicken thighs

3 tablespoons olive oil

2 tablespoons white vinegar

4 cloves garlic, minced

1 teaspoon cumin

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

Juice of 1 lime

Fresh cilantro for garnish

For the Creamy Green Sauce:

1 cup fresh cilantro, packed

1 jalapeño, seeds removed (adjust based on spice preference)

1 clove garlic

½ cup mayonnaise

½ cup plain Greek yogurt

Juice of 1 lime

¼ teaspoon salt

¼ teaspoon black pepper

Instructions

Marinate the Chicken: In a large bowl, whisk together the olive oil, white vinegar, minced garlic, cumin, paprika, salt, black pepper, and lime juice. Add the chicken thighs to the marinade and ensure they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

Prepare the Creamy Green Sauce: In a food processor, combine the cilantro, jalapeño, garlic clove, mayonnaise, Greek yogurt, lime juice, salt, and pepper. Blend until smooth and creamy. Adjust seasoning if needed. Transfer to a bowl and refrigerate until ready to serve.

Grill the Chicken: Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard any leftover marinade. Grill the chicken for about 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.

Rest and Combine: Once grilled, remove the chicken from the grill and let it rest for a few minutes. This will help keep it juicy.

Serve: Slice the chicken and arrange it on a serving platter. Drizzle the creamy green sauce over the chicken or serve it on the side for dipping. Garnish with fresh cilantro.

Enjoy: Pair the grilled chicken with some rice or flatbreads, and enjoy the vibrant flavors of Peru!
