1 lb boneless, skinless chicken thighs, diced

2 cups potato gnocchi

1 cup chicken broth

1 cup heavy cream

1 tablespoon olive oil

3 cloves garlic, minced

1 medium onion, diced

1 cup fresh spinach

Juice and zest of 1 lemon

1 teaspoon dried thyme

Salt and pepper to taste

Grated Parmesan cheese for serving

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced chicken thighs and season with salt and pepper. Cook until the chicken is browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.

    In the same pot, add the diced onion and minced garlic, sautéing for 2-3 minutes until fragrant and the onion is translucent.

      Pour in the chicken broth and bring to a gentle simmer. Stir in the heavy cream, lemon juice, lemon zest, and dried thyme.
