12 oz linguine or spaghetti

2 large onions, thinly sliced

4 cloves garlic, minced

4 cups low-sodium beef broth

1 cup dry white wine (optional; can substitute with more broth)

2 tablespoons olive oil

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 teaspoon balsamic vinegar

Salt and freshly ground black pepper, to taste

1 ½ cups shredded Gruyère cheese

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Onions: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, for about 15-20 minutes until the onions are caramelized and golden brown.

    Add Garlic and Thyme: Add the minced garlic and fresh thyme to the pot. Sauté for an additional 2-3 minutes until fragrant.

      Deglaze the Pot: Pour in the dry white wine, scraping the bottom of the pot to lift any browned bits. Allow it to simmer for about 2-3 minutes until slightly reduced.

        Combine Broth and Pasta: Add the beef broth, balsamic vinegar, and the linguine (or pasta of your choice) into the pot. Stir to combine and bring the mixture to a boil.
