Ingredients

4 boneless, skinless chicken thighs

1 cup long-grain rice (jasmine or basmati)

2 cups chicken broth

1/2 cup honey

1/2 cup BBQ sauce (your favorite kind)

1 tablespoon soy sauce

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 bell pepper (any color), diced

1 cup frozen peas

Fresh parsley or cilantro for garnish (optional)

Instructions

Prep the Chicken: Season the chicken thighs with salt, pepper, garlic powder, onion powder, and smoked paprika. Ensure that the chicken is well coated with the seasonings.

Sear Chicken: In a large skillet or a deep pan over medium heat, add olive oil. Once hot, add the seasoned chicken thighs. Sear for about 5 minutes on each side until they’re golden brown but not cooked through. Remove from the pan and set aside.

Prepare the Sauce: In the same pan, reduce the heat to low. Add honey, BBQ sauce, and soy sauce, stirring well to combine. Let it simmer for about 2-3 minutes until the sauce is slightly thickened.

Cook the Rice: Add the uncooked rice to the pan along with the chicken broth. Stir well to ensure the rice is evenly distributed within the sauce.

Add Vegetables: Fold in the diced bell pepper and frozen peas. Place the seared chicken thighs on top of the rice mixture.

Combine and Simmer: Bring the mixture to a gentle boil. Once boiling, cover the pan with a lid, reduce the heat to low, and let everything simmer for about 20-25 minutes, or until the rice is tender, and the chicken is fully cooked (internal temperature should reach 165°F/75°C).

Final Touches: Once done, remove from heat and let it sit for 5 minutes with the lid on. Fluff the rice with a fork, and if desired, garnish with fresh parsley or cilantro.

Serve: Plate the honey BBQ chicken over a generous scoop of rice, ensuring to drizzle some of the pan sauce over the top.
