2 cups crushed pineapple (canned or fresh, drained)

1 cup heavy whipping cream

8 oz cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

1 cup crushed graham crackers (about 8 full sheets)

½ cup unsalted butter, melted

½ cup shredded coconut (optional)

Fresh pineapple slices and mint leaves for garnish

Instructions
 

Prepare the Crust: In a medium bowl, combine the crushed graham crackers and melted butter until combined. Press this mixture into the bottom of a 9-inch round or square baking dish to form a crust. Place in the refrigerator to chill for about 15 minutes to set.

    Make the Cream Mixture: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and continue to mix until well combined.

      Whip the Cream: In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture. Be careful not to deflate the whipped cream.

        Combine with Pineapple: Gently fold the drained crushed pineapple into the cream mixture until evenly incorporated. If desired, add shredded coconut for extra tropical flavor.
