Ingredients

2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon crushed red pepper flakes (optional)

1 cup sun-dried tomatoes, chopped

1 cup heavy cream

1 cup chicken broth

½ teaspoon dried oregano

½ teaspoon dried basil

¼ cup grated Parmesan cheese

8 ounces fettuccine pasta

Fresh basil leaves, for garnish

Additional grated Parmesan, for serving

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.

Cook the Chicken: In a large skillet over medium heat, heat the olive oil. Add the chicken breasts and cook for about 6-7 minutes on each side, or until golden and cooked through. Remove from the skillet and set aside to rest.

Make the Sauce: In the same skillet, add the minced garlic and crushed red pepper flakes (if using) and sauté for 1 minute until fragrant. Add the sun-dried tomatoes, heavy cream, chicken broth, oregano, and basil. Bring to a simmer and let cook for about 5 minutes, stirring occasionally.

Combine: Slice the cooked chicken into strips and return it to the skillet. Stir in the cooked pasta and grated Parmesan cheese. Toss everything together until the pasta is well-coated with the sauce.

Serve: Plate the pasta and garnish with fresh basil leaves and additional Parmesan cheese. Serve immediately and enjoy!
