1.5 lbs flank steak or skirt steak

1/4 cup olive oil

3 tbsp lime juice (freshly squeezed)

2 tbsp red wine vinegar

4 cloves garlic, minced

2 tsp ground cumin

2 tsp smoked paprika

1 tsp chili powder

1 tsp dried oregano

1/2 tsp black pepper

1 tsp salt

1/2 tsp cayenne pepper (adjust for spice preference)

Fresh cilantro, chopped (for garnish)

Marinate the Steak: In a mixing bowl, whisk together the olive oil, lime juice, red wine vinegar, minced garlic, ground cumin, smoked paprika, chili powder, dried oregano, black pepper, salt, and cayenne pepper.

    Prepare the Meat: Place the flank steak in a large resealable plastic bag or a shallow dish. Pour the marinade over the steak, ensuring it is well-coated. Seal the bag or cover the dish, and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

      Cooking the Steak: Preheat your grill or a cast-iron skillet over medium-high heat. Remove the steak from the marinade, allowing excess marinade to drip off. Discard the leftover marinade.

        Grill/Sear: Place the steak on the grill or in the skillet. Cook for about 4-6 minutes per side for medium-rare, depending on thickness. Use a meat thermometer for best results—135°F for medium-rare, 145°F for medium.
