8 oz linguine or spaghetti

1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

3 tbsp olive oil

1 lemon (zest and juice)

1 tsp red pepper flakes (adjust to taste)

4 cups fresh spinach

1/2 cup chicken broth (or vegetable broth)

Salt and pepper to taste

1/4 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Cook Pasta: In a large pot, bring salted water to a boil. Add the linguine or spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté Shrimp: In a large skillet, heat olive oil over medium heat. Add the minced garlic and red pepper flakes, cooking until fragrant (about 1 minute). Add the shrimp and season with salt and pepper. Cook until the shrimp turns pink and opaque, about 2-3 minutes per side. Remove shrimp from the skillet and set aside.

      Combine Ingredients: In the same skillet, add the chicken broth and juice of one lemon, scraping any browned bits from the bottom. Bring to a simmer, then add the fresh spinach, stirring until wilted (about 2-3 minutes).

        Mix Everything Together: Return the shrimp to the skillet along with the drained pasta, lemon zest, and a splash of reserved pasta water if needed to loosen the sauce. Toss everything together until well combined and heated through. Adjust seasoning with additional salt, pepper, or red pepper flakes if desired.
