Packed with whole grain pasta, juicy cherry tomatoes, crunchy cucumber, and colorful bell peppers, this dish is both refreshing and easy to make. Tossed in a tangy lemon dressing and topped with fresh basil, it’s perfect for summer gatherings or light lunches. Ingredients
  

8 oz whole grain pasta (fusilli or penne)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell pepper, diced (red or yellow)

1/2 cup red onion, thinly sliced

1/4 cup fresh basil leaves, chopped

1/4 cup olive oil

2 tablespoons lemon juice (freshly squeezed)

1 teaspoon lemon zest

1 clove garlic, minced

Salt and pepper to taste

1/4 cup nutritional yeast (optional for a cheesy flavor)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, salt, and pepper until well combined.

      Combine the Ingredients: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell pepper, red onion, and fresh basil.

        Add the Dressing: Pour the dressing over the pasta and vegetables, then toss gently to coat all ingredients evenly. If using nutritional yeast, sprinkle it in and mix well.

          Taste and Adjust: Sample the salad and adjust the seasoning with more salt, pepper, or lemon juice as desired.

            Chill: Cover the salad and let it sit in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together.
