1 lb ground beef (80/20)

4 cloves garlic, minced

1 small onion, finely chopped

1/4 cup soy sauce

2 tablespoons brown sugar

1 tablespoon sesame oil

1 tablespoon gochujang (Korean chili paste)

1 teaspoon ground ginger (or 1 tablespoon fresh ginger, grated)

1 cup carrots, julienned

1 cup snap peas or green beans, trimmed

2 green onions, sliced (for garnish)

1 tablespoon sesame seeds (for garnish)

Cooked rice (white or brown), for serving

Kimchi (optional, for serving)

Instructions
 

Brown the Beef: In a large skillet over medium-high heat, add the ground beef. Cook for 5-7 minutes, breaking it apart with a wooden spoon until browned and fully cooked. Drain excess fat if necessary.

    Sauté Aromatics: Add the minced garlic and chopped onion to the skillet with the beef. Sauté for about 3-4 minutes, or until the onions are translucent and fragrant.

      Mix Sauce: In a small bowl, whisk together the soy sauce, brown sugar, sesame oil, gochujang, and ground ginger. Pour this sauce over the browned beef and onion mixture, stirring well to combine.

        Add Vegetables: Toss in the julienned carrots and snap peas (or green beans). Cook for an additional 5 minutes, stirring occasionally, until the veggies are tender-crisp.

          Serve: Serve the beef and vegetable mixture over a scoop of cooked rice. Garnish with sliced green onions and sesame seeds. Add a side of kimchi for an extra kick, if desired.
