Korean BBQ Meatballs with Spicy Mayo Dip

For the Meatballs:

1 pound ground beef (or ground pork)

1/2 cup breadcrumbs (Panko recommended)

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1 tablespoon ginger, grated

1 egg

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon brown sugar

1 teaspoon gochugaru (Korean red pepper flakes) or to taste

Salt and pepper to taste

Sesame seeds for garnish

For the Spicy Mayo Dip:

1/2 cup mayonnaise

1 tablespoon gochujang (Korean red chili paste)

1 teaspoon rice vinegar

1 teaspoon honey (or more to taste)

1 teaspoon lemon juice

1 teaspoon sesame oil

Salt to taste

Prepare the Meatballs: In a large mixing bowl, combine the ground beef, breadcrumbs, green onions, garlic, ginger, egg, soy sauce, sesame oil, brown sugar, gochugaru, salt, and pepper. Mix until just combined; do not overmix.

    Shape the Meatballs: Preheat your oven to 400°F (200°C). With your hands, form the mixture into uniform meatballs, about 1 to 1.5 inches in diameter. Place them on a baking sheet lined with parchment paper.

      Bake the Meatballs: Bake in the preheated oven for 15-20 minutes, or until the meatballs are cooked through and slightly browned on the outside. For added flavor, you can brush them with a little extra soy sauce or teriyaki sauce halfway through cooking.

        Make the Spicy Mayo Dip: While the meatballs are baking, in a small bowl, whisk together the mayonnaise, gochujang, rice vinegar, honey, lemon juice, sesame oil, and a pinch of salt. Adjust the spice level and sweetness according to your preference.

          Serve: Once the meatballs are done, remove them from the oven and let them cool slightly. Transfer the meatballs to a serving platter, garnish with sesame seeds and additional chopped green onions. Serve with the spicy mayo dip on the side.
