1 lb large shrimp, peeled and deveined

1/4 cup fresh lime juice

1/4 cup orange juice

2 tablespoons olive oil

2 tablespoons tequila (optional)

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

Zest of 1 lime

1/4 cup fresh cilantro, chopped

Fresh pineapple chunks (about 1 cup)

Bell pepper, cut into 1-inch pieces (any color)

Red onion, cut into 1-inch pieces

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes)

Instructions
 

Marinate the Shrimp: In a large mixing bowl, combine lime juice, orange juice, olive oil, tequila, minced garlic, chili powder, cumin, smoked paprika, salt, black pepper, and lime zest. Whisk together until well mixed. Add the shrimp to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes or up to 2 hours for more flavor.

    Prepare the Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning on the grill. Begin threading the shrimp onto the skewers, alternating with chunks of pineapple, bell peppers, and red onion for a colorful presentation. Aim for about 4-5 shrimp per skewer, interspersed with veggies.

      Preheat the Grill: Preheat your grill to medium-high heat (about 400-450°F/200-230°C). If using a grill basket or grill pan, make sure it’s heated as well.
