4 large eggs

4 slices of soft white bread (shokupan)

2 tablespoons mayonnaise (preferably Japanese Kewpie)

1 teaspoon mustard (optional)

Salt and pepper, to taste

1 tablespoon finely chopped chives or green onions (optional)

Butter, for spreading on bread (optional)

Prepare the Eggs: In a medium saucepan, bring water to a gentle boil. Gently add the eggs and boil for 10 minutes. Once done, transfer the eggs to an ice bath to cool for about 5 minutes. This makes peeling easier.

    Peel and Mash: Carefully peel the cooled eggs and place them in a mixing bowl. Using a fork or potato masher, gently mash the eggs until they break apart but remain chunky.

      Mix Ingredients: Add the mayonnaise, mustard (if using), salt, pepper, and chopped chives or green onions to the mashed eggs. Stir everything together until well combined, but be careful not to over-mix.

        Prepare the Bread: If desired, lightly butter the slices of white bread on one side. This will add flavor and a slight crispiness.

          Assemble the Sandwich: Place a generous portion of the egg mixture onto the unbuttered side of two slices of bread. Top with the remaining slices, pressing down gently.
