Jamaican Shrimp Pasta: A Creamy Delight

12 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 cup coconut milk

1 cup heavy cream

2 tbsp Jamaican jerk seasoning

1 tsp paprika

1 tsp salt

½ tsp black pepper

½ cup fresh cilantro, chopped (for garnish)

Juice of 1 lime

Grated Parmesan cheese (optional, for serving)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Shrimp: In a large skillet, heat the olive oil over medium-high heat. Add the shrimp and season with salt, pepper, and half of the jerk seasoning. Cook for about 2-3 minutes on each side until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.

      Create the Base: In the same skillet, add the chopped onion and red bell pepper. Sauté until softened, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

        Make the Cream Sauce: Pour the coconut milk and heavy cream into the skillet. Stir in the remaining jerk seasoning, paprika, and lime juice. Allow the sauce to simmer for 5-7 minutes, stirring occasionally, until it thickens slightly.

          Combine: Add the cooked pasta and shrimp back into the skillet, tossing gently to coat everything in the creamy sauce. Let it cook together for an additional 2-3 minutes.

            Serve: Divide the pasta among plates or bowls. Garnish with chopped fresh cilantro and sprinkle grated Parmesan cheese on top, if desired. Serve immediately.
