Ingredients

1 ½ cups all-purpose flour

1 tsp baking powder

1 tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ tsp ground nutmeg

½ cup unsalted butter, softened

¾ cup brown sugar, packed

½ cup granulated sugar

2 large eggs

1 tsp pure vanilla extract

¾ cup plain Greek yogurt

2 cups peeled and diced apples (preferably Granny Smith or Honeycrisp)

½ cup chopped walnuts or pecans (optional)

1 tbsp sugar mixed with 1 tsp cinnamon for topping

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it well.

Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, ground cinnamon, and nutmeg. Set aside.

Cream Butter and Sugars: In a large mixing bowl, use an electric mixer to cream the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).

Add Eggs and Vanilla: Beat in the eggs, one at a time, followed by the vanilla extract until well combined.

Mix in Yogurt: Gently stir in the Greek yogurt until smooth and combined.

Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.

Fold in Apples and Nuts: Gently fold in the diced apples and walnuts or pecans if using until evenly distributed throughout the batter.

Fill Muffin Tins: Scoop an equal amount of batter into each muffin cup, filling them about ¾ full.

Add Topping: In a small bowl, mix together the sugar and cinnamon for the topping. Sprinkle the mixture over the muffins for added sweetness and crunch.

Bake: Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Cool and Serve: Allow the muffins to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely. Serve warm or at room temperature and enjoy!
