1 cup light brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1/2 cup unsweetened applesauce

1/2 cup Greek yogurt (plain or vanilla)

2 cups peeled, cored, and diced apples (use a mix of sweet and tart varieties, like Granny Smith and Honeycrisp)

1/2 cup chopped walnuts or pecans (optional)

1 tablespoon sugar (for topping)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or spray with non-stick cooking spray.
