Ingredients

2 cups rolled oats

2 cups almond milk (or any milk of choice)

2 large apples, peeled, cored, and diced (Granny Smith or Honeycrisp recommended)

1/2 cup unsweetened applesauce

1/4 cup maple syrup or honey

1/4 cup chopped walnuts or pecans (optional)

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1 teaspoon baking powder

1/4 teaspoon salt

1 teaspoon vanilla extract

1/2 cup raisins or dried cranberries (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish with cooking spray or coconut oil.

Mix Dry Ingredients: In a large bowl, combine the rolled oats, baking powder, cinnamon, nutmeg, and salt. Mix well to ensure the spices are evenly distributed.

Combine Wet Ingredients: In another bowl, whisk together the almond milk, applesauce, maple syrup (or honey), and vanilla extract until smooth.

Combine Mixtures: Pour the wet ingredients into the dry ingredients, mixing until everything is well combined. Then fold in the diced apples and nuts/raisins if using.

Bake the Oatmeal: Transfer the mixture to the prepared baking dish, spreading it evenly with a spatula. Bake in the preheated oven for about 30-35 minutes, or until the top is golden brown and the oatmeal is set.

Cool and Serve: Allow the breakfast bake to cool slightly before cutting it into squares. Serve warm, drizzled with additional maple syrup if desired.
