Ingredients

2 cups rolled oats

2 cups almond milk (or any milk of choice)

2 large apples, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

1/3 cup maple syrup or honey

1/4 cup unsweetened applesauce

2 teaspoons cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1 teaspoon vanilla extract

1/2 cup chopped nuts (walnuts or pecans recommended)

1/4 cup raisins or dried cranberries (optional)

2 tablespoons chia seeds (optional for added nutrition)

Instructions

Preheat Oven: Begin by preheating your oven to 350°F (175°C) and greasing a 9x9-inch baking dish with cooking spray or a little coconut oil.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, cinnamon, nutmeg, salt, chopped nuts, chia seeds, and raisins (if using). Mix well to ensure the oats are evenly coated with the spices.

Combine Wet Ingredients: In another bowl, whisk together the almond milk, maple syrup, applesauce, and vanilla extract until well blended.

Combine Ingredients: Pour the wet mixture over the dry oat mixture and stir until everything is well combined. Fold in the diced apples gently to ensure they are evenly distributed.

Transfer to Baking Dish: Pour the mixture into the prepared baking dish and spread it out evenly. Press down gently to compact the mixture.

Bake: Place the dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the oatmeal is set. A toothpick inserted in the center should come out clean.

Cool & Serve: Once baked, let it cool for about 10 minutes before slicing into squares. Serve warm, drizzled with extra maple syrup or a dollop of yogurt if desired.

Store: Store leftovers in an airtight container in the fridge for up to 5 days. Reheat in the microwave before serving.
