1 cup apple cider

1 cup all-purpose flour

1/2 cup whole wheat flour

1/2 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1/4 cup unsalted butter, melted

1 egg

1/2 teaspoon vanilla extract

1/2 cup confectioners’ sugar (for dusting)

Optional: 2 tablespoons of maple syrup (for extra sweetness)

Reduce the Apple Cider: In a small saucepan, bring 1 cup of apple cider to a boil over medium-high heat. Reduce the heat to medium-low and simmer until the liquid is reduced to about 1/4 cup. This intensifies the apple flavor. Set aside to cool.

    Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a donut pan lightly with non-stick spray.

      Combine Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

        Mix Wet Ingredients: In another bowl, combine the melted butter, reduced apple cider, egg, and vanilla extract. If you're adding maple syrup, include it here.

          Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients. Stir gently until just combined, being careful not to overmix. The batter should be thick but pourable.
