Ingredients

2 cups apple cider

1/2 cup unsweetened applesauce

1/2 cup granulated sugar

1/4 cup packed brown sugar

1 large egg

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

1/2 teaspoon salt

1/4 teaspoon baking soda

1/4 cup melted butter (cooled)

1/2 cup granulated sugar (for coating)

1 teaspoon ground cinnamon (for coating)

Instructions

Reduce the Apple Cider: In a saucepan, simmer the apple cider over medium heat for about 15-20 minutes, until it reduces to about 1 cup. Allow it to cool.

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a donut pan lightly with cooking spray or brush it with melted butter.

Mix Wet Ingredients: In a large mixing bowl, whisk together the cooled apple cider, applesauce, 1/2 cup granulated sugar, brown sugar, egg, and vanilla extract until smooth.

Combine Dry Ingredients: In another bowl, sift together the flour, baking powder, ground cinnamon, nutmeg, salt, and baking soda.

Combine Mixtures: Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Do not overmix.

Pour into Donut Pan: Spoon or pipe the batter into the prepared donut pan, filling each cavity about 2/3 full.

Bake Donuts: Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted into the center comes out clean. Let them cool in the pan for about 5 minutes.

Coat in Cinnamon Sugar: While the donuts are cooling, mix the remaining 1/2 cup of sugar and 1 teaspoon of cinnamon in a bowl. Once the donuts are cool enough to handle, remove them from the pan and coat them in the cinnamon sugar mixture.

Serve: Enjoy your irresistible baked apple cider donuts warm or at room temperature. They’re perfect with a cup of coffee or cider!
