Ingredients

1 cup all-purpose flour

2 tablespoons granulated sugar

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

1 cup buttermilk

1 large egg

2 tablespoons melted butter

½ cup mini chocolate chips

½ cup mini marshmallows

½ cup crushed graham crackers

Extra chocolate chips and marshmallows for topping

Instructions

Combine Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well mixed.

Mix Wet Ingredients: In a separate bowl, whisk together the buttermilk, egg, and melted butter until smooth.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.

Add Sweet Ingredients: Fold in the mini chocolate chips, mini marshmallows, and crushed graham crackers until evenly distributed throughout the batter.

Heat the Pan: Preheat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or a little butter.

Cook the Pancakes: Pour about ¼ cup of batter for each pancake onto the skillet. Cook for about 2-3 minutes or until bubbles form on the surface and the edges look dry. Flip and cook for an additional 1-2 minutes until golden brown.

Assemble the Delight: Stack the pancakes on a plate, sprinkling extra chocolate chips and marshmallows between each layer. You can also broil the top layer briefly to toast the marshmallows if desired.

Serve: Drizzle with chocolate syrup, top with more crushed graham crackers, and serve warm while gooey!
