Ingredients

1 lb salmon fillet, skin removed and cut into bite-sized pieces

2 tablespoons olive oil

Salt and pepper to taste

½ cup honey

1 tablespoon sriracha (adjust for spice preference)

1 tablespoon apple cider vinegar

2 cloves garlic, minced

1 tablespoon fresh lime juice

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions

Marinate the Salmon: In a mixing bowl, whisk together the honey, sriracha, apple cider vinegar, minced garlic, and lime juice. Add the salmon pieces and gently coat them in the marinade. Let it sit for 15-20 minutes to absorb the flavors.

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare the Salmon: Remove the salmon from the marinade, allowing excess marinade to drip off (reserve the marinade for later). Place the salmon bites on the prepared baking sheet. Drizzle with olive oil, and season with salt and pepper.

Bake the Salmon: Bake in the preheated oven for about 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.

Make the Glaze: While the salmon is baking, pour the reserved marinade into a small saucepan and bring to a boil. Reduce heat and let it simmer for a few minutes until it thickens slightly.

Glaze the Salmon: Once the salmon is done baking, drizzle the thickened glaze over the salmon bites.

Garnish & Serve: Top with chopped green onions and sesame seeds for an extra crunch and serve hot!
