HONEY GARLIC ASIAN CHICKEN KABOBS

Ingredients
  

1.5 pounds boneless, skinless chicken thighs, cut into bite-sized pieces

1/4 cup honey

1/4 cup soy sauce (low sodium recommended)

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon sriracha (optional, for heat)

1 red bell pepper, cut into chunks

1 green bell pepper, cut into chunks

1 small red onion, cut into chunks

Wooden or metal skewers (if using wooden, soaked in water for 30 minutes)

Sesame seeds and chopped green onions for garnish

Instructions
 

Prepare the Marinade: In a bowl, whisk together honey, soy sauce, minced garlic, grated ginger, sesame oil, rice vinegar, and sriracha (if using). This will be your marinade.

    Marinate the Chicken: Place the chicken pieces in a large resealable plastic bag or bowl. Pour the marinade over the chicken and seal the bag or cover the bowl. Refrigerate for at least 1 hour, or up to 4 hours for more flavor.

      Preheat the Grill: Preheat your grill to medium-high heat. If using an oven, preheat it to 400°F (200°C) and line a baking sheet with foil.

        Assemble the Kabobs: Thread the marinated chicken pieces, bell peppers, and red onion onto skewers, alternating between the chicken and vegetables.

          Grill the Kabobs: Place the skewers on the hot grill or baking sheet. Grill for about 10-12 minutes, turning occasionally until the chicken is cooked through and has nice char marks. If using an oven, bake for 20-25 minutes, turning halfway through. Ensure the internal temperature of the chicken reaches 165°F (75°C).

            Garnish and Serve: Once cooked, remove the kabobs from heat. Sprinkle with sesame seeds and chopped green onions for garnish. Serve with steamed rice or your favorite Asian-inspired sides.
