Ingredients

2 medium sweet potatoes

1 pound ground turkey

1 cup black beans (canned, drained, and rinsed)

1 cup corn (fresh or canned)

1 red bell pepper, diced

1 small onion, diced

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon olive oil

1 avocado, diced (for topping)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

Prepare Sweet Potatoes: Pierce the sweet potatoes multiple times with a fork, then place them on a baking sheet. Bake in the preheated oven for 45-50 minutes or until tender.

Cook Ground Turkey: In a large skillet over medium heat, add olive oil and sauté the diced onion and garlic until translucent (about 3-4 minutes).

Add Turkey and Spices: Add the ground turkey to the skillet. Season with chili powder, cumin, smoked paprika, salt, and pepper. Cook until the turkey is browned and fully cooked (about 7-8 minutes).

Incorporate Vegetables: Once the turkey is cooked, stir in black beans, corn, and diced red bell pepper. Cook for an additional 5-6 minutes until the veggies are tender and heated through.

Stuff the Sweet Potatoes: Once the sweet potatoes are done baking, let them cool slightly. Cut them open lengthwise, and using a fork, fluff the insides a bit. Spoon the turkey mixture generously into each sweet potato.

Garnish and Serve: Top with diced avocado and sprinkle with fresh cilantro. Serve with lime wedges on the side for an added zing.
