Ingredients

2 lbs chicken thighs (bone-in, skin-on)

1 cup soy sauce (preferably low-sodium)

1/2 cup brown sugar

1/2 cup water

1/4 cup rice vinegar

1/4 cup honey

4 cloves garlic (minced)

1 inch ginger (peeled and grated)

1 tablespoon sesame oil

1 teaspoon black pepper

3 green onions (sliced, for garnish)

1 tablespoon sesame seeds (toasted, for garnish)

Instructions

Prepare the Marinade: In a medium bowl, whisk together the soy sauce, brown sugar, water, rice vinegar, honey, minced garlic, grated ginger, sesame oil, and black pepper until well combined.

Marinate the Chicken: Place the chicken thighs in a large resealable bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, ideally overnight for maximum flavor.

Preheat the Oven: When ready to cook, preheat your oven to 375°F (190°C).

Bake the Chicken: Transfer the marinated chicken thighs to a baking dish, reserving the marinade. Arrange the thighs skin-side up. Pour half of the reserved marinade over the chicken. Bake in the preheated oven for about 45 minutes to 1 hour, or until the chicken is cooked through (internal temperature should reach 165°F/74°C).

Glaze the Chicken: In the last 10 minutes of baking, drizzle the remaining marinade over the chicken to create a nice glaze and let it caramelize slightly.

Garnish and Serve: Once cooked, remove from the oven and let it rest for a few minutes. Garnish the chicken with sliced green onions and toasted sesame seeds before serving.

Enjoy: Serve the Aloha Shoyu Chicken warm with steamed rice and a side of your favorite veggies, drizzled with additional glaze if desired.
