Ingredients

1 lb ground turkey

2 tablespoons sesame oil

1 bell pepper (red or yellow), sliced

1 cup broccoli florets

1 cup snap peas

1 carrot, julienned

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup soy sauce (or tamari for gluten-free)

2 tablespoons honey or maple syrup

2 tablespoons rice vinegar

1 teaspoon cornstarch mixed with 2 tablespoons water

Sesame seeds for garnish

Green onions, sliced for garnish

Cooked rice or quinoa for serving

Instructions

Prepare the Sauce: In a small bowl, whisk together the soy sauce, honey, rice vinegar, and cornstarch mixture. Set aside.

Cook the Turkey: In a large skillet or wok, heat the sesame oil over medium-high heat. Add the ground turkey, breaking it up with a spatula. Sauté until fully cooked and browned, about 5-7 minutes.

Add the Vegetables: Stir in the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant. Then, add the sliced bell pepper, broccoli florets, snap peas, and julienned carrot. Stir-fry for about 4-5 minutes, or until the vegetables are tender yet crisp.

Combine with Sauce: Pour the prepared teriyaki sauce over the turkey and vegetables. Stir well to combine and cook for an additional 2-3 minutes until the sauce thickens and coats the stir fry evenly.

Garnish and Serve: Remove from heat and serve over cooked rice or quinoa. Garnish with sesame seeds and sliced green onions.
