Ground Turkey Sweet Potato Skillet

1 pound ground turkey

2 medium sweet potatoes, peeled and diced

1 red bell pepper, diced

1 small yellow onion, diced

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon dried oregano

Salt and pepper to taste

2 tablespoons olive oil

1 cup fresh spinach

1 avocado, sliced (for garnish)

Fresh cilantro (for garnish)

Instructions
 

Heat the Skillet: In a large skillet, heat the olive oil over medium heat.

    Sauté the Aromatics: Add the diced onion and garlic. Sauté for about 2-3 minutes until the onion becomes translucent.

      Cook the Sweet Potatoes: Stir in the diced sweet potatoes and season with salt, pepper, smoked paprika, cumin, and oregano. Cover the skillet and cook for about 10-12 minutes, stirring occasionally, until the sweet potatoes are tender.

        Add Ground Turkey: Move the sweet potatoes to the side of the skillet. Crumble in the ground turkey, mixing it with the sweet potatoes as it cooks. Cook for an additional 5-7 minutes until the turkey is cooked through and no longer pink.

          Incorporate Bell Pepper and Spinach: Add the diced red bell pepper and spinach to the skillet. Stir everything together and cook for another 3-5 minutes until the spinach has wilted.

            Serve: Remove from heat, garnish with fresh cilantro and avocado slices. Serve hot and enjoy!
