Ground Turkey Sweet Potato Skillet

Packed with protein and nutrients, this delicious one-pan meal features savory ground turkey, tender sweet potatoes, and vibrant veggies like bell peppers and spinach. Ingredients
  

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 red bell pepper, diced

1 small onion, diced

2 cloves garlic, minced

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp chili powder

1/4 tsp salt

1/4 tsp black pepper

2 tbsp olive oil

1 cup spinach (fresh or frozen)

1 avocado, sliced (for serving)

Fresh cilantro, chopped (for garnish)

Instructions
 

Cook Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and season with salt and pepper. Sauté for about 10-12 minutes, stirring occasionally, until they start to soften and are golden brown. Remove them from the skillet and set aside.

    Sauté Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and bell pepper, cooking until they are softened (about 5 minutes). Add the minced garlic and cook for an additional minute until fragrant.

      Brown the Turkey: Push the veggies to the side of the skillet, add the ground turkey to the center, and break it apart with a spatula. Season with cumin, smoked paprika, and chili powder. Cook for approximately 8-10 minutes until the turkey is browned and fully cooked.

        Combine Ingredients: Once the turkey is cooked, add the sautéed sweet potatoes back into the skillet along with the spinach. Stir everything together and cook for another 2-3 minutes until the spinach is wilted.

          Serve: Remove from heat and top with sliced avocado and freshly chopped cilantro. Serve warm and enjoy your delicious Ground Turkey Sweet Potato Skillet!
