1 lb ground turkey

1 tablespoon vegetable oil

3 cloves garlic, minced

1 inch ginger, grated

1 small onion, finely chopped

1 red bell pepper, diced

1 cup mushrooms, finely chopped

2 carrots, grated

1/4 cup low-sodium soy sauce

2 tablespoons hoisin sauce

1 tablespoon rice vinegar

1 tablespoon sriracha (adjust to taste)

1 teaspoon sesame oil

Salt and pepper, to taste

1 head butter lettuce or iceberg lettuce, leaves separated

Chopped green onions and sesame seeds, for garnish

Cook the Turkey: In a large skillet, heat the vegetable oil over medium-high heat. Add the ground turkey and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes. Drain excess fat if necessary.

    Sauté the Aromatics: Add the minced garlic, grated ginger, and chopped onion to the skillet. Sauté for about 2 minutes, or until the onion becomes translucent.
