1.5 lbs (700g) chicken thighs, skinless and boneless

1 cup plain yogurt

2 tablespoons vegetable oil

2 tablespoons lemon juice

4 cloves garlic, minced

2 inches ginger, grated

2 teaspoons ground cumin

2 teaspoons ground coriander

2 teaspoons garam masala

1 teaspoon smoked paprika

1 teaspoon turmeric powder

1 teaspoon cayenne pepper (adjust for spice preference)

Salt, to taste

Fresh cilantro, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Prepare Marinade: In a large mixing bowl, whisk together the yogurt, vegetable oil, lemon juice, garlic, and ginger until smooth.

    Add Spices: Stir in the ground cumin, ground coriander, garam masala, smoked paprika, turmeric powder, and cayenne pepper. Mix well to ensure the spices are evenly distributed.

      Marinate Chicken: Add the chicken thighs to the marinade and coat thoroughly. Cover the bowl and refrigerate for at least 4 hours, preferably overnight, to let the flavors permeate the meat.

        Preheat Grill: When ready to cook, preheat your grill to medium-high heat (about 400°F/200°C).
