Grilled Chicken Wraps

Ingredients
  

2 boneless, skinless chicken breasts

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

Salt and pepper to taste

2 tablespoons olive oil

4 large whole wheat tortillas

1 cup mixed greens (spinach, arugula, kale)

1 large avocado, sliced

1 cup cherry tomatoes, halved

½ cup shredded carrots

½ cup feta cheese, crumbled (optional)

Your choice of dressing (ranch, balsamic vinaigrette, or yogurt dressing)

Instructions
 

Marinate the Chicken: In a bowl, combine olive oil, smoked paprika, garlic powder, onion powder, cumin, salt, and pepper. Add the chicken breasts and coat them well with the marinade. Let it marinate for at least 30 minutes (up to 2 hours for stronger flavor).

    Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Once hot, add the marinated chicken breasts. Grill for about 6-7 minutes on one side, then flip and grill for another 5-6 minutes until fully cooked (internal temperature should reach 165°F/74°C). Remove from the grill and let it rest for 5 minutes before slicing thinly.

      Prepare the Tortillas: While the chicken is resting, warm the tortillas on the grill for about 10-20 seconds on each side to make them pliable.

        Assemble the Wraps: Lay the warm tortilla flat. Start with a handful of mixed greens in the center, followed by slices of grilled chicken, avocado, cherry tomatoes, shredded carrots, and feta cheese if using.

          Add Dressing: Drizzle your choice of dressing over the fillings, and then fold the sides of the tortilla inwards before rolling it up tightly from the bottom.

            Cut and Serve: Slice the wrap in half diagonally and enjoy! Serve it with extra dressing on the side for dipping.
