Greek Feta Roast Potatoes

2 pounds (900g) baby potatoes, halved

4 tablespoons olive oil

1 tablespoon dried oregano

1 teaspoon garlic powder

Salt and pepper, to taste

1 block (8 oz) feta cheese, crumbled

1 cup cherry tomatoes, halved

2 tablespoons fresh lemon juice

1/4 cup fresh parsley, chopped

1 teaspoon red pepper flakes (optional)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the halved baby potatoes, olive oil, dried oregano, garlic powder, salt, and pepper. Toss until the potatoes are well coated.

      Spread the potatoes in a single layer on a large baking sheet. Roast in the preheated oven for 25 minutes or until they start to become golden and crispy.

        Remove the baking sheet from the oven, sprinkle the crumbled feta cheese and cherry tomatoes evenly over the potatoes, and return to the oven.

          Roast for an additional 15-20 minutes, until the tomatoes are juicy and the potatoes are tender and golden brown.

            Once done, remove from the oven and drizzle with fresh lemon juice. Sprinkle with chopped parsley and red pepper flakes if you like a little heat.

              Serve warm as a side dish or a delicious appetizer. Enjoy!
